They are cut from the prized USDA Prime Tenderloin, and they are hand-trimmed with extreme care to ensure that there is only enough fat on the outside for exceptional flavor. The amount of marbling inside is a sign of the highest quality standard, which can only be achieved by about 1% of all beef. Like all the steaks in our USDA Prime Beef line of products, our USDA Prime Filet Mignons are slowly wet-aged for a minimum of 21 days. |
